Tasty Vegan Broccoli Lattice Tart Recipe

This is a very easy recipe for a vegan broccoli tart. It is healthy and tasty too.

Ingredients:
For the tomato sauce:

✓ 2 tomatoes
✓ 2 garlic cloves
✓ 1 ginger, small piece
✓ 1 tbsp. oil
✓ Salt and pepper to taste

For the tart:

✓ ½ cup whole wheat flour
✓ ½ cup all-purpose flour
✓ 1 tsp. active yeast
✓ ½ tsp. sugar/honey (for yeast)
✓ 1 cup veggies (boiled broccoli, peppers)
✓ 2 tbsp. oil
✓ salt and pepper to taste

Method:
For the tomato sauce:
1. Blend tomatoes, garlic and ginger in a blender.
2. Heat 1 tbsp. oil in a pan, sauté the tomato paste for 5 minutes.
3. Add salt and pepper to taste, turn off the flame.

For the tart:
1. Put warm water in a cup and add yeast over water and stir in sugar/honey.
2. Let stand for about 10 minutes, or until it begins to bubble.
3. Knead the dough with flour, oil, yeast and salt.
4. Add extra flour as needed to keep from sticking to hands and board
5. Place the dough in a well-oiled vessel and cover with a cloth/plastic wrap.

6. Allow the dough to double in size for about 30-35 minutes or more.
7. Punch down the dough, take a small portion of it and roll the dough into round shape and place in a well-oiled pizza tin.
8. Press the dough at the edges; Remove the excess dough from the top of the edges using a rolling pin.
9. Bake at 170 C (or 350 F) for 10 minutes. Allow to cool for 5-10 minutes.
10. When it is cool, slowly take out the baked shell form the pizza tin.
11. Take 2 tbsp. of homemade tomato sauce and spread evenly on the pizza.

12. Sprinkle salt and pepper.
13. Lay the veggies on the pizza.
14. Bake at 170 C (or 350 F) for 10 minutes.
15. Take a piece of dough, roll it down and cut it into 2cm wide strips, top up with strips of pastry to make a lattice. Pinch on the edges, so that it sticks to the tart.

16. Brush the lattice strips with oil.
17. Bake at 170 C (or 350 F) for 10 minutes.
18. Slice the tart with a pizza cutter and serve warm.

Tips:
1. Add cheese or toppings of your choice.
2. Substitute yeast with baking powder/baking soda.
