Korean Style Carrot Recipe
Carrots are a common food in the United States that is used to make stew and soup. Carrots are rich in vitamin A, vitamin B6, vitamin C, vitamin K, fiber, calcium, potassium, magnesium and folic acid.
The beta carotene or vitamin A found in carrots helps to promote healthy skin and prevent wrinkles. On the other hand, vitamin B6 prevents the skin from drying out. While vitamin C found in carrots helps to fight free radicals, hence reducing premature skin aging.
Carrots can be consumed raw to enjoy its nutritional content. However, studies have shown that cooked carrots have higher levels of antioxidant properties, including phenolic acids and beta carotene compared to raw carrots. You can have up to 5 servings of carrots every day.
Ingredients and How To Prepare:
- Grate 1.5lb (500g) of carrot
- 1/2 tsp salt
- 1.5 tbsp of sugar
- 1/2 tsp of black pepper
- 1/4 tsp of red pepper
- 1/2 tsp of paprika
- 1/4 tsp of curry powder
- 2 tsp of coriander powder
- 2 tbsp of white vinegar
- 5 tbsp of olive oil
- 3-4 pressed cloves of garlic
- Mix well, refrigerate overnight and serve
