Ingredients and Directions For Eggplant Pizza
- Slice 1 large eggplant into 1/3 inch slices
- Richly sprinkle with salt
- Leave for about 20 minutes
- Remove excess moisture with cloth
- Place parchment paper on a tray and put the eggplant slices
- Drizzle with olive oil, ground black pepper and oregano
- Roast for about 15-20 minutes (400F/200C)
- Meanwhile slice 3.5 oz (100g) of mozzarela
- Chop 1 small onion
- Slice 3-4 cherry tomatoes
- Smear each eggplant slice with 1tbsp of tamato sauce
- Place the mozzarela, onion and tomato slices on top
- Return to the oven for 3-5 minutes, until cheese melts
- Sprinkle chopped basil leaves on top, and serve
