Buckwheat Mushroom Recipe

Ingredients and Directions For Buckwheat Mushroom Recipe

  • Chop 1 large onion
  • Grate 1 medium carrot
  • Chop 10 oz (280g) of mushrooms
  • Preheat 1 tbsp of olive oil
  • Add onions
  • Sauté for 2 minutes
  • Add carrots and sauté for 3 minutes more
  • Meanwhile mix 1 cup of buckwheat and 2 cups of water
  • Add good pinch of salt and cook on a medium heat
  • Mix chopped mushrooms with carrots and onions
  • Cook for about 20 minutes
  • Once buckwheat is cooked, place mushrooms and carrots on top
  • Serve with chopped hard-cooked egg and greens
